The tables at local markets are piled high with winter squash of all kinds, a welcome sight this fall.

The flesh of most winter squash is bright orange, indicating the presence of beta carotene, a potent anti-cancer component. From pumpkins to butternut and buttercup and tiny delicata to acorn, winter squash is a good storage vegetable.

Spaghetti squash is lemon yellow, with a pale golden interior. It is great for low-carb diets as a substitute for pasta because it is very mild in flavor, adapting well to any pasta recipe. Try feta cheese with tomatoes, onion, garlic and green or Kalamata olives. For a fast side dish, simply stir in a mixture of melted butter with plenty of softened minced garlic, chopped fresh parsley and grated Parmesan. Or combine with frozen pesto from your summer garden.
